Meet Lainie
Hello and thanks for visiting Deliciously Fit!


My name is Lainie and I work full-time, go to school part-time and think about food….all the time? Well, not quite; but I think about it a lot! Basically, anyone who knows me knows that I have an intense infatuation with good eats. It’s not that I love just any food though; my real passion lies in making healthy, wholesome and nutritious food taste as good as it feels. I love to cook, I love to bake, and I love preparing good-for-you food that people genuinely look forward to eating. My philosophy? It is, without a doubt, 100% possible to be healthy (and enjoy the journey there) without sacrificing taste, flavor and fun; you just have to know how to do it! With Deliciously Fit, it is my goal to prove how easy it is to incorporate good nutrition – and of course the occasional splurge – into everyday life. This combination has helped me lose over 20 pounds and perhaps more importantly, has made me successful in keeping it off.

A Little Bit About Me…

I live in Portland, Oregon with my husband Jake, miniature dachshund Lola and fat cat Izzy

I graduated from the University of Denver with a B.A. in journalism in 2004

In 2007, I decided to go back to school to pursue a second degree – a B.S. in dietetics. If all goes as planned, I should be done with school by Summer 2010

I work full time as a specialty pharmaceutical sales representative

I love almost all foods, but my favorites include peanut butter, almond butter, cheese, all kinds of fish, sushi, bananas, cherries, greek yogurt and hummus

Oh my gosh, we have so much in common! I love everything about cooking/baking too and making fresh, wholesome recipes that taste good and are good for you too! I am soo jealous that you live in Portland! My fiancee and I went there last spring break and had an absolute blast, what a wonderful city! Do you live in the city? have you been to Park Kitchen? I think that was our favorite stop. and I’d love a mini doxie, can’t wait to read more

Hey, just found your blog. I love meeting dietetics students (I actually teach dietetics students!). Keep at it and graduation will be right around the corner. Like some of your other readers I am a RD so if you have questions feel free to ask. I look forward to reading more of your blog.
Glad to hear from you. I did clinical for the past 5 years. I was working on my master’s and I knew I wanted to teach later on in my career. The nutrition department at UNLV needed some instructors so i quickly jumped on the opportunity. I knew after the first term that I really wanted to teach. I taught into to human nutrition for non-majors at UNLV. Now I work part time for Kaplan University online which is perfect since I moved overseas with my husband who is in the Air Force. I currently teach medical terminology and nutrition management and planning. I think in the next term or so I will drop one of my med term courses and pick up another nutrition course. The beauty of dietetics is that you can do so many things. you can do multiple things at once or start in one area and in a few years do something different. you can start your degree thinking you want to do something and then when you are done want to do something completely different. It’s awesome!
