A Chili Success!

Don’t you just love daylight savings?  I do.  Even though we only had one extra hour today, it somehow felt like we had about five extra hours.  Why is that I wonder?  It’s amazing that it is 7:30PM and I’ve done all my homework, cleaned the house, prepared for work tomorrow, made dinner, done the dishes and have started blogging…rarely are ALL of those things completed by this time at night.  I don’t even know what to do with myself when I’m done blogging!

Lunch today was weird…so weird, in fact, that I didn’t bother to take a picture.  I was home alone all day and I just kind of grazed on fruit, vegetables, cheese and crackers throughout the afternoon.  I really hate it when I graze instead of eat a full meal…but somehow that didn’t stop me from doing it today…

Dinner was a big hit!  When I met Jake, he told me he hated chili.  (Actually, he told me he hated a lot of things which he has since learned to love).  Why he supposedly hated chili was beyond me – he loves meat and vegetables, and isn’t that the base of any good chili (assuming you are a little carni like me) recipe?  I had a strong feeling if I made the chili and put it in front of him he’d like it…and I was right!

DSCN2065 I’ve made quite a few chili recipes in my life, and this one ranks towards the top.  It’s easy, healthy and could definitely be tweaked and changed depending on your style.

Slow Turkey Chili (adapted from www.southernliving.com)

Ingredients:

-1.25 pounds extra lean ground turkey

-1 large onion, chopped

-1 garlic clove, minced

-1.5 cups frozen corn kernels

-1 red bell pepper, chopped

-1 green bell pepper, chopped

-1 (28-oz.) can crushed tomatoes

-1 (15-oz.) can black beans, rinsed and drained

-1 (8-oz.) can tomato sauce

-1 (1.25 oz.) package chili seasoning mix

-1.5 teaspoon salt

Directions:

1.  Cook first 3 ingredients in a large skillet over medium-high heat, stirring until turkey crumbles and is no longer pink; drain.

2.  Spoon mixture into a 5 1/2-qt. slow cooker; stir in corn and next 7 ingredients until well blended.

3.  Cook at HIGH 4 to 5 hours or at LOW 6 to 8 hours. Serve with desired toppings.

We had ours with some nonfat Greek yogurt on top; cheese would’ve been good too, but unfortunately we were out (thanks a lot, love affair).

We also had a vegetable salad and cornbread on the side:

    Chili is the definition of comfort food! My husband refused to eat beans, so I enjoy chili all alone. His loss!

    The time change has really screwed with me. I mean, it’s only one hour but I feel like I actually LOST sleep. I know, it’s crazy!

    My husband was the same way – when we met he liked nothing! Now, his favourite foods are all sorts of things that he wouldn’t eat before :-)

    That chili looks fab, and your right, cornbread is the only thing that goes perfectly with that delicious bowl of chili! yummm!!

    i dont love the fact that it was dark at 5:52 yesterday! haha. but i did like that extra hour on halloween when i was out playing :) your chili looks great! cornbread+chili is such a novemberish meal. yum!

    I’m actually not a huge fan of daylight savings! I hate that it gets dark so early – bah! The extra hour of sleep was certainly nice though:)

    That chilli looks awesome, girl! I, too, love cornbread with chilli. Peanut butter sandwiches also pair well with it.

    mmm that cornbread looks delicious! the one thing i hate about daylight savings though is leaving work when it’s already dark!! it does make it feel a little more like fall though :)

    I love chilli! It’s something I never make for some reason…and I’ve always had it with rice or a baked potato :) YUM. Perfect for this weather- bookmarking this recipe! How do you make you cornbead?

    I make the most amazing chili-like soup: Taco Soup. Its a Weight Watchers recipe, but it is oh so delicious. And Phil loves it which is the bomb! We put sour cream and fritos on ours! And we put green chilis in our cornbread. Yum!

    Chili + cornbread = one of my fave meals! I prefer chicken chili, but any chili is comforting in the fall. Homemade cornbread is the best. Love it.

    Your chili looks very yummy, I would eat it! Chili has to have cornbread alongside. I haven’t made a batch this fall yet because it’s still in the 70s here and kind of hot, but I think it’s going to cool down this weekend. I actually hate the time change!! lol only because by the time I get home and cook dinner all the precious sunlight is gone to take food pictures!! :)
